In the middle of a match (between games), my opponent wanted to change
boards. Does he have the right to ask for a board change? I wound up
rolling him for it -- could I have insisted on keeping the same board
(and not even roll for board choice) since we had already started?

Danish rules are very specific on changes of equipment allowed. A
tournament director may change equipment at any time. However, players of
a match in progress may change a board only if is defective, or if it is
an illegal size (less than 44 cm x 55 cm or more than 66 cm x 88 cm) and
only now has a proper-sized board become available, or of course if both
players agree to a change.
Danish rules also allow one player to demand a change to lipped cups and
precision dice, if these became available only after the match started.
The comparable U.S. rule says: "3.3 EQUIPMENT CHANGES. Director may
replace defective equipment at any time. Otherwise the four dice
initially selected shall be used throughout." which I would interpret to
mean that you would be within your rights to object to a change of board,
unless it were defective.

Rule 3.3 goes on to talk about mixing the dice, but not about any other
equipment changes. My feeling is that you would have been within your
rights to insist on keeping the same board, unless your opponent could
convince the Director that the board in use were, in some way, defective.
